Vitigno Pecorino The vineyards Pecorino ed altre varietà autorizzate di media età allevati a guyot con basso carico di produzione su terreni sciolti. The winemaking The grapes are sent to the pneumatic press for soft crushing, then the must is fermented with their indigenous yeasts at low temperature (12/14°C) in stainless steel tanks for about 30 days. Ageing In stainless steel tanks, followed by ageing in bottle. Tasting notes Straw yellow color, intense nose with hints of broom, white fruits and ethereal. The palate is fresh, intense, fruity and full-bodied. Food pairings Cucina di mare elaborata, formaggi di media stagionatura, primi piatti strutturati, carni bianche. Serving temperature 10-12°C Alcohol content 13% vol
